You need

A powerful smoothie blender (one that can crush ice!) or a food processor

1 large zip-loc or other plastic bag

2 litres cubed watermelon, about 20mm cubes

1 banana (optional), sliced

Juice of 1 lime (about 20ml)

½ or more to taste, mild chilli (optional); deseeded

15- 20ml good quality rose water (optional)

Lime juice always complements the flavour

To prepare

Place the cubed watermelon and the banana in the plastic bag and freeze it, preferably overnight

Place the frozen fruit into the food processor or blender, add the chilli, rose water and/or lime. Pulse the motor to break up the frozen fruit. As the pieces break up you can let the motor run until it forms a smooth, fine ice cream.

Scoop it into a freezer proof container or into individual freezer proof serving dishes or glass jars.

Remove the sorbet from the freezer about 10 minutes before serving.

To serve, decorate with a mint leaf or a whole chilli, or red pineapple sage flowers, or rose petals (when using flowers make sure that they are pesticide free!)

OR Scoop balls into your cocktail glass and top up with the cocktail!
