For approximately 250ml sauce you need

3-4 large red plums

125ml sugar

125ml port

To prepare

Roughly slice plums and discard the stone (pip)

Place all the ingredients in a saucepan and bring to the boil, whilst stirring to dissolve the sugar.

Boil for 2-3 minutes to allow the fruit to cook and disintegrate.

Blend until it is smooth.

Serve hot with a baked pudding e.g. plum crumble

or chilled with any plum based dessert or ice cream.
