You need

1 pear per person

For 4 pears

400 ml white wine

I used an old chenin blanc that had developed a delicious honey flavour

100ml honey

2 strips of orange or lemon jest

2 slices of fresh ginger

A pinch of saffron threads or 2ml ground turmeric



Peel the pears, leaving the stalks on

Place all the ingredients in a small enough saucepan, for the liquid to come to at least halfway up the pears if they are on their sides.

Bring it to the boil and simmer until the pears are tender, turning the pears regularly so that they are evenly cooked and coloured.


Remove the pears and allow the syrup to reduce until you have about 30ml per person

Serve chilled or at room temperature
