You need

250ml cubed fresh mango, for a salad cut cubes larger (15-20mm), for a salsa I like just less than 10mm cubes

Optional, for a Mexican flavour: 125ml corn kernels (either freshly blanched and grilled or tinned)

25-30ml sliced pickled Jalapeños

5ml finely sliced red chilli

30ml coarsely chopped coriander leaves

Squeeze of lime or lemon juice

Optional: 250ml cucumber, cubed, smaller cubes for salsa, chunkier cubes as a salad

Optional: 30ml finely chopped red onion or spring onions

To prepare

Mix all ingredients together

Best served at room temperature
