For about 250ml dressing you need
1 small clove of garlic
Zest of 1 lime
30ml lime juice
About 125ml coriander leaves firmly packed
1ml salt
125ml good quality mayonnaise or full cream yoghurt
125ml olive oil
Optional: 3ml chopped green chilli or 5ml chopped pickled green Jalapeño

Limes give this dressing a unique sweet flavour
To prepare
Place all the ingredients into a food processor or a blender and blend until smooth
Serve as a dip, over vegetables or potatoes
A delicious sauce for grilled fish or a seafood salad
Finish with a sprinkle of fresh coriander leaves or if you’ve added jalapeño, a few slices of jalapeño!
