You need

1 liter Spar Litchi Juice

50ml Elderflower Cordial

50ml Vodka

To prepare

Place all the ingredients in an electric ice cream maker and churn until frozen

Alternatively pour the mixture into a shallow dish. Place it in the freezer and stir the mixture every 30 minutes to break up the ice crystals.

To coat with chocolate, melt white chocolate in a clean bowl over a pan of warm water. Paint the mould and allow the chocolate to harden before spooning in the ice cream. Allow it to refreeze before serving.
