Makes 8 small servings
You need
240g tub low fat cream cheese
200ml cream, lightly whipped
Approximately 40 ml Limoncello, or to taste!
3 egg whites, whisked to soft peaks just before you need them
Approximately 15ml lemon curd per serving
8 small glasses or espresso cups
To prepare
Place the cream cheese in the bowl and add whisk it until it has softened slightly
Add the cream and the Limonchello and whisk well
Finally mix in a third of the egg whites to ‘loosen’ the mixture, then fold in the rest
Pour the mixture into 8 small glasses or espresso cups
Top each with 10-15ml lemon curd
Refrigerate until required
