For the batter you need

400ml flour

15ml baking powder

2ml salt

20ml ground ginger

100ml brown sugar

100ml cup white sugar

75g butter

25ml honey or golden syrup

200ml milk

Zest of 1 lime or a small lemon

20ml finely grated fresh ginger

For the sauce you need

70ml brown sugar

70ml white sugar

25ml honey or golden syrup

25ml ground ginger

Juice of 1 lime or small lemon, about 25ml

500ml boiling water

To prepare

Grease a baking dish. It must be about 50ml deep and diameter of about 20cm

Turn oven to 180°C

To serve: whipped cream or custard.

Put the kettle on to boil!

In a mixing bowl, place the flour, baking powder, salt, sugars and mix well.

In the meantime melt the butter and honey in the microwave.

Once the honey and butter have melted add the milk, ginger and zest and pour this into the bowl of dry ingredients.

Stir gently until it forms a thick batter. Do not over-mix!

Pour the batter into the baking dish.

The thick batter is poured into the base of the dish

For the syrup, use the same mixing bowl. Don’t stress if there are still a few scrapings of the batter!

Place all the syrup ingredients in the bowl and stir to mix.

Pour this over the batter.

At this stage its looks weird, do not worry!

Place the baking dish in the center of the oven and bake for 35 minutes. The top will be firm and it will be floating on a thick syrup.

Serve warm with thick cream or custard and a few curls of lime zest.
