500ml baby tomatoes
2 medium sized red onions
1 clove garlic crushed
125ml white sugar
2-3 red chillies
Only use ripe tomatoes
Divide tomatoes in half. Slice half into two and place these, together with the whole tomatoes into a saucepan.
Add the onion, garlic, sugar and chillies.
Slowly bring the mixture to the boil, stirring to dissolve the sugar.
Once the mixture boil stir occasionally and especially for the last few minutes to avoid burning.
Once the mixture becomes syrupy and thickens it is ready.
Spoon it into sterilised jars.
Enjoy with cheese or as a jam.
