You need

250ml freshly cooked sweetcorn, frozen sweetcorn or 1 can corn, drained

3 large or 2 extra large eggs

200g chunky cottage cheese (use one with chives added, and then eliminate the spring onions)

150g self raising flour

3 ml salt

1ml black pepper

About 50ml milk

Oil (I use canola) for frying

Optional:

2 spring onions or 4 chives finely sliced, or 20ml finely chopped onion

20ml finely chopped coriander

1 fresh red chilli, finely chopped

25 ml finely grated Parmesan cheese

 

 

 

Prepare

Place sweetcorn, eggs, cheese and seasoning in a mixing bowl

Give it a good stir to combine all the ingredients, except milk, moisten mixture with milk until it has a soft dropping consistency.

Preheat a frying pan and lightly grease with oil

Place large tablespoonfuls into the pan and cook over medium heat until bubbles form on the surface and the base is golden, then turn and cook the other side until golden

Serve warm with mashed avo, sour cream and/or rashers of crisp bacon
