You need approximately one tennis ball sized potato per person
1 large orange per 2-4 servings: 2-3 strips of zest and the orange juiced
1 stick cinnamon
1 star anise
20ml lemon juice (approximately ½ lemon)
2ml salt
Twist of black pepper
Optional, 1 red chilli sliced or 1 ml chilli flakes
Slice sweet potatoes and place them in a microwaveable bowl.
Add all the ingredients and 100ml water.
Cover the bowl with a lid or cling film and microwave on full power for 6-8 minutes or until the potato is soft.
Remove the cinnamon and star anise, but retain the zest. Pour the remaining water & juice mixture into a small jug. Using a stick blender or a potato masher, mash the potato, adding some of the retained liquid until a smooth texture is achieved.
Serve hot with grilled sausages, rich meaty stews, grilled chicken or fish dishes.
