For two generous portions use
1 medium sized Cos or Romaine lettuce
125ml fat free yoghurt ( or full or double cream)
20ml lemon juice
30ml olive oil
1 clove garlic, crushed
5ml Worcestershire Sauce
2-4 anchovies, finely sliced, plus a few extra to drape over the top (optional)
30ml finely grated Parmesan, plus extra for sprinkling on top
Optional extras:
Grilled chicken breast
Crisp Bacon or Panchetta
Avo slices
Croutons
To prepare
Remove the base core of the lettuce
Slit through the whole lettuce vertically
Wash the leaves thoroughly
Mix and the ingredients together
Place the leaves in a large bowl and add the dressing just before serving. Mix lightly, trying not to bruise the leaves.
Serve on flat plates or shallow bowls
Top with grated cheese, chicken strips or crisp bacon
Croutons go over last. If you are using croutons try making your own, rather than using commercial ones!
