Traditionally this recipe contains water instead of almond milk and white bread is added to give it body. You may use bread if you do not have any use for psyllium husk powder.
The recipe below is perfect for those who are dairy or gluten intolerant, but always check that your guests are not allergic to nuts …. This can kill them!
Serves 6-8
You need
200g raw almonds, whole, blanched
750ml almond milk
1 large clove garlic
50ml medium cream sherry
200ml good quality olive oil
1 ½ t psyllium powder or 2 slices white bread, crusts removed
Salt to taste
Optional: 1 Granny Smith apple, peeled and cored
Prepare
Place all the ingredients in a blender, food processor or Nutribullet and blend until smooth
The apple is not essential as it does not add particular flavour, but freshness, and it mellows the garlic
Chill well
I find that if made 24 hrs in advance the flavours mellow.

Traditionally served with halved seedless grapes
Prawns: 1-2 cooked prawns per person. Cut prawns into 1cm pieces and marinate in dressing (for 6-8 persons) made of: 100ml olive oil, 20ml lemon juice or sherry, 20ml finely chopped parsley, for an Asian touch add 1 mild red chilli, finely chopped & replace parsley with coriander.
Panchetta or streaky bacon, grilled until crisp, sprinkled on surface just before serving.
