For approximately 500g cooked fish: one of a mixture of the following
Cubed, Octopus, Squid or Calamari
Steamed Mussels
Steamed Prawns
Fresh (raw) Tuna, cut into 15mm cubes or 5mm thick slices
For the marinade you need
125ml good quality olive oil
1 shallot or small onion, very finely chopped
4 cloves garlic, finely crushed or grated
15ml chopped parsley
5ml chopped coriander, dill or fennel
75ml good quality red or white wine vinegar
Zest of one lemon
50ml lemon juice
5ml sugar
Optional: 1-2 red chilli sliced or 5ml chilli flakes
Optional: 3ml fennel seeds
Optional: add pitted black or green olives
Combine all the marinade ingredients, pour it over the fish and allow to marinate for about 5 hours before serving.
If the fish is covered by the marinade it will have a fridge life of 3-4 days
To serve
Bring to room temperature. The olive oil will ‘set’ in the fridge but soften at room temperature. At this stage you can add other fresh ingredients such as cubed tomato, cucumber or avo.
