For 6 starters or 2-4 main course salads you will need
2C shredded cabbage
1 can shredded tuna in salt water, undrained
1-2 pickled herring fillets, sliced into 5mm thick slices
25ml coarsely chopped parsley or a mix or parsley and celery leaves
1 stick celery thinly sliced
2-3 pickled gherkins (I like sweet-sour), sliced
1 apple, core removed, cut into matchsticks (keep peel on)
A squeeze of lemon juice, pour over the apple to prevent browning
Optional: 1 cup cubed cucumber
Extra parsley to finish
For the Dressing you need
25ml pickling liquid from the gherkins
25ml pickling liquid from the herring
100ml plain yoghurt (I used fat free, but you can use full or double cream)
100ml mayonnaise (I used low fat, but you can choose what you prefer)
To assemble
Place all the ingredients in a mixing bowl, reserving a few apple and gherkin slices to sprinkle on top when serving.
Mix the dressing ingredients and pour over the salad. Using 2 forks mix it lighty.
Place it in a serving dish, or individual bowls for a starter
Finish off with apple and gherkin slices and a few parsley leaves
Serve chilled as it is or with a crusty loaf
