This is one of our favourite vegetarian meals.

It can also be served as an accompaniment to any roast or grilled meat. I have popped it into the pizza oven alongside a pork roast….. delicious!

Use quantities suited to the number of people you will serve


Slice brinjal into 1cm thick slices

5mm thick red onion slices

5mm thick slices ripe tomato

5mm thick slices mozzarella or feta cheese

A few fresh basil leaves

2-3 cloves garlic, finely crushed


Freshly milled black pepper

Olive oil


  • Arrange alternate slices brinjal, onion, tomato, cheese and basil in a baking dish
  • Mix the garlic, salt and pepper with the oil, pour this over the brinjal mixture
  • Bake in preheated oven at 180°C for 30 minutes
