You need
250ml broccoli florets, blanched
A handful of greens beans (about 10), topped and blanched
250ml finely shredded red and green cabbage
About 150ml red pepper or pimento
1 spring onion sliced or 1/2 red onion finely sliced
1 large avo sliced or cubed, just before serving
5ml black sesame seeds
For the dressing mix the following ingredients:
100ml teriyaki sauce (bought or see recipe below)
20ml sesame oil
100ml olive oil
1 chilli finely chopped
15ml grated fresh ginger
1 clove garlic crushed
To prepare
I prefer to blanch my veggies in the microwave. Place prepared broccoli & beans in a microwaveable bowl with 100ml water. Cover with a lid or plastic wrap. Microwave on full power for 2 minutes, drain OR pour boiling water over veggies, allow to stand for 5 minutes, then drain.
Pour the dressing over the warm veggies. Allow to cool to room temperature.
Add the remaining veggies, except the avo and sesame seeds.
Arrange in a serving dish. This can be done up to 2 hours ahead of time.
Just before serving, toss the salad lightly to distribute the dressing, add the avo and sprinkle the sesame seeds over.
Home made Teriyaki Sauce Recipe
Teriyaki Sauce or Marinade
You need
250ml water
100ml light soy sauce
125ml dark brown sugar
30ml honey
15ml finely grated fresh ginger or 5ml ground ginger
1 clove garlic crushed
20ml potato flour mixed with 40ml cold water
For a marinade add the following after the sauce has cooled:
100ml canola oil
50ml rice wine vinegar
To prepare
Combine all the ingredients except oil and vinegar in a small saucepan and stir while heating to boiling point. Allow to boil for about 30 seconds, chill and use as required.
For a marinade add the oil and vinegar after cooling.
