Today our taste buds are travelling back to Italy!
Previously I have posted a recipe for the vegetarian dish, Melanzane Parmigiana. This is very similar, just with the addition of a layer of chicken breast.
It’s super healthy!
The recipe consiste of 4 easy components
Baked or fried aubergine slices
A yummy tomato ragu (stew!)
Flash fried (or grilled) Chicken breasts topped with fresh basil
Another layer of tomato topped with a mix of gooey Mozzarella & tasty Parmesan
Oven baked to finish
It makes a hearty, but healthy main course that can be served on its own. In Italy the pasta course usually takes care of the carbohydrates and the main course or primi is very much protein and vegetable based. If you are going to serve carbs boiled baby potatoes or a flat pasta such as tagliatelle will be ideal.
Great as a family meal or for cooking for crowds
This recipe can easily be halved to serve 4 portions, or doubled up for a big party.
It is a lovely party dish for a crowd as it can be made well in advance and simply popped into the oven 30 minutes before serving.
